Being at the cutting edge of Ice Sculpting in Australia for the last twenty five years has meant that I have carved for some amazing people and events. I can still recall the first sculpture I made in Melbourne whilst working at Cafe Neon. It was a 'Zorro' for a new band, the Black Zorro's (later to change the spelling and become famous). Like music, Ice Sculpting has made many changes over the years. Down Under Ice Design is proud to be a driving force in these changes.

Friday 28th May Cilantro restaurant held its first seafood sustainability degustation dinner, and to celebrate this occasion Holmesglen HCB invited professional Ice Sculptor, Glenn Smith from Down Under Ice designs in Point Lonsdale as special guest to create the showpiece. Glenn created a magnificent carved ice seahorse, displaying it with coloured lights as the focal point for the seafood extravaganza.
Glenn has been a Chef for over 30 years and began working with Ice more than 25 years ago in the UK during his travels. Glenn has been Sculpting Ice and other food mediums like Chocolate and Butter sculptures for many years, and was trained specifically in Japan visiting many times over the past 9 years. He has also competed in many northern hemisphere competitions, in freezing cold conditions during this time.
Glenn brought with him a 1 meter block of ice from pure rain water which was frozen using solar powered energy. He came armed with all his specialised electrical and hand tools specifically designed for ice sculpture and of course the ‘chain saw’ which impressively carved through the ice like a hot knife through butter.
The students thoroughly enjoyed the demonstration and learnt a lot from the experience.

The table-tennis one particularly drew a lot of oohs and aahs!! Thanks also for your professional approach, we knew we were in good hands with you, which is a good feeling when organising a big event.

Hi Glenn,

I am still in awe at the beauty of the sculpture you designed and carved for us out of ice!! It was definately one of the focal points of the evening, and worked in perfectly with the 'winter theme' of our wedding.
There was constantly people around, beside and behind it, and the kids were licking it too! Everyone took pictures near it and of it - it looked absolutely amazing!
Chris and I walked straight to it first, before walking through the guests to the dance floor - it was too beautiful to look at from afar - we had to get up close (and touch it!).
Thank you so much for the wonderful job you did!
Your ice sculpure will be a talking point amongst the Canberrians, Wollongongians, Sydneyans, Melbournians and Brisbanians for many years to come.

Hi Glenn,
Thanks so much for helping us out at the Bosom Buddies Charity Ball last Saturday night by creating the ice diamond for us, it was really spectacular and helped provide a central focal point amongst the sea of tables.

On behalf of the National Capital Commission, we would like to take this opportunity to thank you for your contribution to the Gateway to Australia program of Winterlude 2001.
This year's edition of the Gateway program has been evaluated as the best Gateway ever. Your talent, enthusiasm and dedication to the program were critical to the success of this venture. The beautiful ice sculptures that you and your fellow carvers created were admired by thousands-of people who strolled through Festival Plaza. Although the sculptures have disappeared, the memories will remain for years to come.

Glenn Smith, internationally renowned ice sculptor, each year pays tribute – in ice – to a special feature or theme of the Queenscliff Music Festival.  Over the years he’s featured musicians; the Queenscliff Ferry; helped launch the new name for the Festival train - “QMF Express”; the ABC partnership with Queenscliff; and a variety of musical instruments.
